Smoked Pork Loin stuffed with Crab with Mango Salsa
serves 10- 12




Ingredients:

6 lb pork loin butterflied
3 cups fresh crab
1 lemon
1 cup or so chicken or veggie stock
10 cups bread crumbs - I use organic bread usually with rosemary, thyme, dill or focacia bread. Don't use cheap white bread.
1 white onion
1 stick butter


Melt the butter and saute onions until soft. Mix crab, lemon juice, stock and bread crumbs with butter and onion. Season lightly with salt and pepper. Add any other seasonings you like or have fresh on hand.

Flatten your pork loin on level surface. Place crab mixture in center. Fold in both sides of the pork loin and secure with skewers or poultry lacers.

This is best grilled on charcoal with seasoned wood for smoking. Prepare your charcoals as usual. Brown the roast on all sides until sizzling. Move off the direct heat. Add wood to charcoal. Place tin pan of water over coals/wood. Let it get good and smokey. Once you have a good smoke going, turn down your air vents to slow the fire. Baste your roast with a little marinade to keep it moist. (Just about anything works for marinade - italian dressing is an easy option, wine is another) Let your meat roast for about 50 minutes - hour. Use a meat thermometer to cook to your liking. Take off the grill and let it rest at least 20 minutes before cutting.


Mango Salsa
3 ripe mangos, cubed
4 jalepeno peppers, seeded and chopped
1/2 red onion, chopped
1/2 lemon juice
1 -2 cups cilantro, chopped
Toss and serve on the side

  2. My husband will love this. For those of us that are gluten-free we can use gluten-free bread crumbs.

    1. Absolutely, Suzie. I like to keep an assortment of bread crumbs on hand. You can bake/buy bread ahead of time to plan your bread crumb collection. And you can make a point to save a portion of any fresh bread you bake or buy. I like to have plain french bread, some kind of savory olive bread, a sweet bread and a good stock whole grain. All of these can now be found or made in gluten free options. LOVE THAT!
      Ideally, your collection has finely ground crumbs, large and small cubes. They store easily in air tight containers in the freezer for months. That covers everything from thickening to croutons to bread salads.
      Lots of yummy, healthy grains that don't cost a lot of money and add great depth to your pantry options.
